This morning I made the yummiest oatmeal raisin cookies for Break the Fast at church. I got the recipe from Peggy at work. Basically it's the recipe off the Quaker Oats box except that you substitute almond granola for 1/2 of the oats. YUM! Here's the recipe:
PEGGY'S OATMEAL RAISIN COOKIES
1/2 lb (2 sticks) butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 cups old fashioned oats
2 cups granola w/almonds
1 cup raisins
Heat oven to 350 degrees. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins; mix well. Drop with small cookie scoop onto cookie sheet lined with parchment paper. Bake 10 to 12 minuts or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Makes 4 dozen cookies.

I have copied and printed the Oatmeal raisin cookie recipe and placed it in Chanelle's hands. They sound wonderful! I have always had a weakness for these cookies!
