Missionaries and Apple Pie

Tonight we had the pleasure of feeding two of our local missionaries, Elder Scott, from Gooding, Idaho and Elder Hoffer, from Midvale, Utah. It is always an honor to have these young men in our home. We love the spirit they bring and while we fill their tummies, they fill our hearts with a desire to share the gospel with others.
I made roast beef, mashed potatoes and gravy, steamed veggies, rolls and for dessert....

CRUNCHY CARAMEL APPLE PIE

I have been dying to make this pie ever since I first tasted it on Christmas Eve at the Olson's. Lia Lee brought it for dessert and I LOVED it! Thanks for sharing the recipe Lia! And thank you to my friend Cindy for the beautiful pie plate, a Christmas gift that I've been excited to use!
This is a Good Morning America Apple Pie Recipe Winner and pretty easy to make:

Crunchy Carmel Apple Pie

Ingredients:

1 pastry crust for a 9 inch deep-dish pie (homemade or store-bought)

1/2 cup sugar

3 TBLS all-purpose flour

1 tsp. ground cinnamon

1/8 tsp salt

6 cups thinly slice, peeled apples (golden delicious and fuji)

1 recipe crumb topping (see below)

1/2 cup chopped pecans

1/4 cup caramel topping


Ingredients for Crumb Topping:

1 cup packed brown sugar

1/2 cup all-purpose flour

1/2 cup quick-cooking rolled oats

1/2 cup butter

Directions for Crumb Topping:

1. Stir together brown sugar, flour and rolled oats

2. Cut in 1/2 cup butter until topping is like course crumbs. Set aside.


DIRECTIONS FOR PIE:

1. In a large mixing bowl, stir together the sugar, flour, cinnamon and salt.

2. Add apple slices and gently toss until coated.

3. Transfer apple mixture to the pie shell

4. Sprinkle crumb topping over apple mixture.

5. Place pie on a cookie sheet so the drippings don't drop into your oven.

6. Cover edges of pie with aluminum foil.

7. Bake in a preheated 375 oven for 25 minutes. Then remove foil and put back in for another 25 to 30 minutes without foil.

8. Remove from oven. Sprinkle pie with chopped pecans then drizzle with caramel on top.

9. Cool on a wire rack and enjoy warm or at room temperature.

10. Delicious when served with vanilla ice cream!

Bon Voyage Party for Tacy

Tonight Carrie hosted a Bon Voyage Party for Tacy at our house. Tacy leaves on Tuesday for the MTC and will be serving a mission in Jakarta, Indonesia. It was fun to wish her well as she embarks on this new adventure! We truly do love you Tacy. YOU'RE AMAZING!!!!

- BYU TV

Today BYU TV came to Placerville to film a special on a sister in our ward named Elizabeth Hoernig. She recently joined the church at age 82. They interviewed Kurt because he helped teach her and also confirmed her. She is a very interesting lady who has studied comparative religions for many years. Watching BYU TV was one of her favorite things to do, so when the missionaries knocked on her door, she was ready to hear more.

Elder Gutierrez, who baptized Elizabeth, surprised her by coming for the big event. He was transferred to Jackson, CA after her baptism. She was so excited to see him.
