We don't see much of Tyler now that he and Alyssa have their own apartment in Sacramento. He does stop by most Monday and Thursday nights before Young Single Adult FHE and Institute. He has dinner with us and usually washes his car. He always brings his guitar and plays the latest song he's been working on for me. I'm very proud of my boy.

- SOUR CREAM CHICKEN ENCHILADAS

Tonight Kurt had a rare early shift. He usually works late on Wednesday night. I told him I'd cook something yummy, and I did, if I do say so myself. This recipe's a keeper:

Sour Cream Chicken Enchiladas

INGREDIENTS:

1 (10.75 ounce) can cream of chicken soup (I use 98% fat free)
1 cup sour cream (I use low fat)
1 TBLS margarine
1 onion, chopped
1 tsp. chili powder
2 cups chopped, cooked chicken breast (I've used rotisserie chicken too)
1 (4 oz.) can chopped green chili peppers, drained
8 (10 inch) flour tortillas
1-2 cups shredded cheddar or monterey jack cheese

DIRECTIONS:

1. Preheat oven to 350 degrees
2. In a small bowl, mix the soup and sour cream, set aside.
3. Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder.
Saute until tender. Stir in the chicken, chili peppers, and 2 TBLS of the soup mixture. Cook
and stir until heated through.
4. Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the
chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down,
in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese.
5. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

- TEMPLE NIGHT

Tonight Linda, Cheryl and I carpooled down to the Sacramento Temple for the 6:30 session. Girl's Camp starts next week so we had a Girl's Camp Staff Temple night. It was so nice to be together as a presidency one last time. I was released 3 weeks ago and Linda and Cheryl were released last Sunday. We did family names for Linda - three sisters. Mine was Elizabeth Higgs. There were lots of tears in the Celestial room afterwards. We stopped at Cold Stone on the way home. Fun night!

- MY NEW CAMERA!

Well, tonight I bit the bullet and bought myself a new camera. I'm really excited about it. I used to have a camera with 10x zoom and loved it so much, so when I saw this one on sale at Costco I thought this might be the camera for me, even though I've never had a Panasonic before. I mentioned it to one of my co-workers today and she said she'd been looking at the same camera and was considering getting one too. When Dr. Kiholm overheard our conversation he said he has one and LOVES it. That did it. Both Kathy and I drove straight to Costco with our $70 off coupons after work and came home with new cameras. Battery is charging. I can't wait to try it out!!!!

- PRIMARY, HERE I COME!!!

Today was my first official day as 2nd Counselor in the Primary Presidency. Our ward was in dire need of people to fill positions so those members of our ward serving in Stake callings were released and called to ward positions. I'll miss working with the Young Women of our stake but know that this will be a great opportunity for me to serve the children of our ward. It's been almost 20 years since I've served in Primary. I've always been in Young Women, Seminary or Relief Society, so I feel like a fish out of water. I've got to relearn the Primary songs and switch gears a little. My responsibilities include nursery, Sunbeams and quarterly activity days. Today I jumped right in and got my feet wet by substituting in the CTR 5 & 6 class. They were great. We learned about how much Jesus loves us. I think I'm really going to like this!

- MY PHOTO OF THE DAY BLOG

Everyone who knows me knows how much I love taking photos. I love photo journaling. Every day I take a photo and write a little bit about my day. I recently lost my camera with 2 months worth of photos that I hadn't saved. I was devastated. It was like losing part of my self! ;) I'm using my daughter's camera until I get another (hopefully tomorrow). I decided to start this blog as a back up for my photos and do better at posting them daily. Thank you to my friends and family who humor me when I constantly want to take pictures of them and everything that's happening. Some friends have decided that if they can't beat me, they'll join me and start their own "photo of the day" journal. I love looking back each month and remembering the events and what I did. It also helps me try to do something "photo worthy" every day. Obviously I have days when not much is happening, so it's fun to try to come up with something to write about. I welcome all comments and hope you enjoy my photos. p.s. I'm an amateur when it comes to photography.....you'll see what I mean ;)
