- ST. PATRICK'S DAY

Today we had a potluck at work for St. Patrick's Day. I made Chocolate Mint Brownies. They are one of my favorites - and green too ;)

CHOCOLATE MINT BROWNIES

1 cup sugar
4 eggs, beaten
½ tsp. Salt
1 tsp. Vanilla
½ cup butter, softened
1 cup flour
1 cup Hershey's syrup

2 cups powdered sugar
2 TBLS milk
½ cup butter, softened
½ tsp peppermint
Green food coloring

1 cup semi-sweet chocolate chips, melted in double boiler
6 TBLS butter



BROWNIE LAYER - Preheat oven to 350 degrees. Mix first seven ingredients. Bake for 30 minutes in a 9 x 13 inch greased pan. Remove from oven. Cool completely.

GREEN FROSTING LAYER – Mix next five ingredients. Spread over cooled brownies and refrigerate.

CHOCOLATE GLAZE LAYER – Mix remaining two ingredients together. When smooth, pour over green layer.

Store in refrigerator. Take out 30 minutes before cutting. Cut in small squares to serve.
