- NO BAKE COOKIES

Shandra brought the yummiest cookies to work today. I haven't had these in years. My sister and I used to make them all the time. They literally take about 10 minutes to make. I had to come home and make some more. Kurt was so excited. He said he used to make them all the time when he was young too. YUM!!!

NO BAKE COOKIES

2 cups white sugar
3 TBLS unsweetened cocoa powder
1/2 cup butter
1/2 cup milk
1 pinch salt
3 1/2 cups quick cooking oats
1/2 cup peanut butter
1 tsp. vanilla extract

1. In a saucepan, bring sugar, cocoa, butter, milk and salt to a rapid boil. Boil for 1 minute
2. Add quick cooking oats, peanut butter and vanilla. Mix well.
3. Working quickly, drop by spoonfuls onto waxed paper. Let cool. ENJOY!

- HAPPY BIRTHDAY ABBEY

Today is Abbey's 3rd birthday!!!! Happy Birthday sweetie! Watch for a package from Grandma, Grandpa, Tyler and Alyssa in the mail today or tomorrow! We love you!!!




Tonight, after church, Alyssa and Alax came over for dinner. We threw some steaks on the grill and made some baked potatoes, a salad and parkerhouse rolls. We always have fun when they come over. After dinner we ate brownies alamode and watched "The Incredible Hulk."

Today Kurt went fishing at Ice House Reservoir with our friend Dave. The weather forecast called for rain, but they decided to take their chances.

Dave recently bought a fishing boat so they were looking forward to trying it out.

Kurt caught the first fish. His first fish of the season.

Kurt and Dave called from the lake to say they were coming home and to get the frying pan ready. I made some cornbread, some rice pilaf, a salad and some brownies.

We had a yummy dinner together. The fish was delicious. I can't wait until the guys catch some more!

- MY FAVORITE BREAKFAST FOOD

Hi, my name is Tami and I'm a carbohydrate addict. It's true. I love carbs! Potatoes, rice, pasta, bread, and let's not forget anything with sugar in it. It's a problem. I can't help myself.

This morning I made my all time favorite breakfast food - German Potato Pancakes. YUM!


GERMAN POTATO PANCAKES

1 egg
1 TBLS flour
1/8 tsp. baking powder
1/2 tsp. salt
1/8 tsp. pepper
3 medium potatoes, peeled and shredded
1/4 cup finely chopped onion
1/8 cup vegetable oil

1. In a large bowl, beat together eggs, flour, baking powder, salt and pepper. Mix in potatoes and onion.

2. Heat oil in a large skillet over medium heat. In batches, drop heaping tablespoons (I use 1/4 measuring cup) of the potato mixture into the skillet. Press to flatten. Cook about 3-4 minutes on each side, until browned and crispy. Drain on paper towels.

- SHOPPING ADVENTURE

Today I went shopping with Alyssa's future mother-in-law, Pam. We were looking for our dresses for the wedding. We had such a fun time! We left at 9:00 this morning and drove to Roseville. We didn't find anything there so we had lunch (that always makes everything better). She introduced me to Yakisoba at a Japanese Restaurant that she and Dean love. We ended up driving back to Folsom where we finally found what we were looking for (actually, we had NO idea what we were looking for ;) at about 5:00 p.m. Long day, but it was fun hanging out together. We were a little punchy by the end of the day - see photo ;) My feet hurt - I wore the wrong shoes today!
